What you need

pinch ground black pepper

pinch iodized salt

garlic

lb fresh green beans

oyster sauce
Instructions
Rinse and pat dry the green beans. We want them to be dry before flash frying them to get that nice blistered exterior. Heat the neutral oil in a pan on medium-high heat. Dip one end of a wooden chopstick or skewer in the oil, if it starts to bubble immediately, the oil is ready! (If using a thermometer, the temperature should read 350ºF) Fry the green beans for about 3 minutes, the green beans should be blistered but maintain a slight crisp. Remove the green beans from the pan and drain most of the oil from the pan, only leaving about 1 tablespoon of oil. Add the green beans, garlic, and oyster sauce back to the pan. Saute the green beans until the garlic is aromatic, for about 1 minute. We do not want to brown the garlic. Season with salt and pepper to taste. Serve while hot!View original recipe
