Curry Udon Noodles

What you need

cup purple cabbage

cup red onion
baby carrots

salted butter

udon noodles
Instructions
Prepare all the vegetables by cutting them into bite-sized pieces. Set them aside. Bring a pot of water to a boil and cook the udon noodles according to package instructions. Strain and set them aside. In another pot, melt the butter on medium heat and add the vegetables. Saute until the onions are translucent. Add the water (or broth) and curry roux cubes into the pot. Stir to make sure the curry roux cubes are fully dissolved. Lower the heat to a simmer and allow the curry to thicken, for about 2 minutes.
