What you need

cup blue cheese crumbles

tbsp honey

tbsp extra-virgin olive oil

cup cherry tomato

puff pastry

tbsp parsley
Instructions
Preheat the oven to 350ºF and prep a baking sheet lined with parchment paper. Cut the puff pastry sheet into 4 equal pieces. Slice the tomatoes into halves. Drizzle olive oil and salt + pepper onto the parchment paper and add a layer of tomatoes on top of the olive oil. Drizzle honey on top of the tomato halves and place a piece of puff pastry dough on top of the tomatoes. Using a fork, lightly press down the edges to seal it closed. Brush egg wash on top of the push pastry. Bake for 25 minutes or until golden brown. Use a bench scraper or spatula to flip the cooked puff pastries over.
