Let's start by heating some neutral oil in a wok (or large skillet) on medium heat. Add your peeled and deveined shrimp to the hot wok. Cook the shrimp until done, about 3-5 minutes. Remove the cooked shrimp from the wok and set it aside. Add some more oil (if needed) to the wok and add your beaten eggs. Using a wooden spatula, scramble the eggs until they're fluffy and done. Remove the scrambled eggs from the wok and set it aside. Add a little more oil (it's hard to get restaurant-style stir-fry if you skimp on the oil) to the wok and add the minced garlic. Cook until the garlic is fragrant and add the veggies to the wok. Saute the veggies until tender with a slight bite to them. Add the soy sauce, oyster sauce, dark soy sauce, and white pepper to the veggies. Add the cooked shrimp and scrambled eggs back to the wok and mix to combine. Add the fresh noodles to the wok and gently toss everything together until combined. Drizzle some sesame oil over the noodles before serving for added nutty flavor. Enjoy!
