Spam Musubi Bowl

This Spam Musubi Bowl is a twist on the classic Hawaiian Spam Musubi. Crispy pan-seared spam is seasoned with a sticky teriyaki sauce and served atop a bed of fresh rice, garnished with a creamy yolk and furikake rice seasoning.

In a large saucepan, heat neutral oil on medium heat and saute the onion until fragrant and translucent. Remove from pan and set it aside. Using the same saucepan, heat neutral oil on medium-high heat and add the spam slices. Cook until the spam is crispy and browned on each side, about 2-3 minutes per side. While the spam is cooking, make your teriyaki sauce mixture. In a bowl, combine the soy sauce, sesame oil, sugar, mirin, and water. Stir to mix well and pour 2/3 of the sauce mixture over the spam. Reserve 1/3 of the teriyaki sauce for later. Reduce the heat to low and simmer until the sauce is nearly absorbed and has caramelized, about an additional 3-5 minutes. Remove the spam from the pan and set it aside. In a serving bowl, add half a portion of your cooked rice and flatten. Add the grilled onions on top of the rice. Add the remaining rice over the grilled onions and create a dome shape using a spoon or rice spatula. (Although it's optional, the dome shape acts as a foundation to layer the spam and toppings. I think it looks pretty this way!) Place the spam slices on top of the rice, in a circular direction. Garnish with green onions and egg yolk (make sure to use pasteurized egg for this, but feel free to omit this altogether if it's not your thing). Drizzle the remaining 1/3 of the teriyaki sauce we reserved earlier over the spam musubi bowl before serving. Enjoy!
