Rinse and pat dry the green beans. We want them to be dry before flash frying them to get that nice blistered exterior. Heat the neutral oil in a pan on medium-high heat. Dip one end of a wooden chopstick or skewer in the oil, if it starts to bubble immediately, the oil is ready! (If using a thermometer, the temperature should read 350ºF) Fry the green beans for about 3 minutes, the green beans should be blistered but maintain a slight crisp. Remove the green beans from the pan and drain most of the oil from the pan, only leaving about 1 tablespoon of oil. Add the green beans, garlic, and oyster sauce back to the pan. Saute the green beans until the garlic is aromatic, for about 1 minute. We do not want to brown the garlic. Season with salt and pepper to taste. Serve while hot!
